What is this ingredient?
Coconut milk is made by grating the white flesh of ripe coconuts and pressing it with water. The result is a creamy, fat-rich liquid used worldwide as a base for curries, soups, sauces, desserts and dairy-free preparations.
There are two common forms: full-fat canned coconut milk with about 15-20% fat and coconut drink in cartons with about 1-2% fat. For cooking, the full-fat version is usually best because it adds body and creaminess; for smoothies or drinks, the lighter version often works better.
Much of the fat in coconut milk comes from lauric acid, a medium-chain fatty acid that gives coconut its distinctive nutritional profile.
