What is this ingredient?

Cinnamon is a spice made from the inner bark of trees in the Cinnamomum genus. The bark is harvested, dried, and then naturally curls into the familiar quills. In the kitchen, the distinction between two main types matters most: Cassia cinnamon, the darker, harder, often cheaper variety commonly found in supermarkets, and Ceylon cinnamon, the lighter, softer variety with a more refined, milder flavor.
