What is this ingredient?

Beef steak comes from the loin or back of the cow and is known for its tender texture and rich flavor. Besides high-quality protein, it contains all essential amino acids, including leucine which directly activates muscle protein synthesis. The iron in steak is primarily heme iron, which is absorbed 2-3 times better than plant-based iron. Beef steak also contains natural creatine and carnosine, compounds interesting for athletes. Quality varies greatly: from grass-fed (more omega-3) to grain-fed (more marbling). The Maillard reaction during searing gives the characteristic flavor.

Let sit at room temperature for 30 min. Pat dry with paper towel. Sear on high heat 2-3 min per side. Rest 5 min before cutting. Core temp: rare 50°C, medium-rare 55°C, medium 60°C.
