What is this ingredient?

Almond butter is a rich, creamy spread made from 100% roasted or raw almonds (Prunus dulcis), ground into a smooth or lightly chunky paste. Per 100 g, it contains about 26 mg vitamin E (173% RI), 270 mg magnesium, 347 mg calcium, 12.2 g fiber and 21 g plant-based protein. Vitamin E contributes to the protection of cells from oxidative stress; magnesium contributes to normal energy-yielding metabolism and normal muscle function; calcium is needed for the maintenance of normal bones.

Its fat profile is mainly rich in monounsaturated fats, with oleic acid (C18:1) as an important fatty acid — similar to the profile of olive oil. Almond butter also contains natural almond fiber, including fractions discussed in nutrition research in relation to fermentation by gut bacteria. Because of its concentrated texture, a small 1-tablespoon portion is enough to add body and nutty depth to oatmeal, smoothies, toast, dressings or sauces.

Choose a version without added sugar or hydrogenated fats where possible. In natural almond butter, oil may rise to the top; this is normal and can simply be stirred back into the paste. Unroasted versions generally retain more of the original vitamin E, while roasted versions have a deeper, warmer flavor.
