Butter Chicken — or Murgh Makhani, if you want to call it by its proper name — started as a way to give leftover tandoori chicken a second life. The sauce is the secret: tomatoes cooked down long with ginger, garlic and a handful of spices, then pureed with soaked cashews into something closer to velvet than sauce.
