  • Now at its best: Eggplant

A classic Greek baked dish with layers of spiced eggplant, juicy beef and a golden béchamel top.

Few dishes smell as good as a moussaka coming out of the oven. That mix of cinnamon, tomato and melted cheese drifting through your kitchen while you wait. And you must wait — ten minutes at least, otherwise everything flows apart on your plate.

The base is simple but precise. Eggplant sliced, brushed with olive oil and baked until limp and golden. Meanwhile you brown the beef with onion and garlic, add tomato and cinnamon — that cinnamon makes the difference, a warmth you cannot quite place but recognize as Greek.

Then you layer. Eggplant, meat, eggplant, meat. The béchamel goes last, made with almond flour instead of wheat. Parmesan through it, nutmeg in it. After forty-five minutes the edges bubble, the top is golden, and your house is full of that scent.

The next day it is even better.

This recipe combines ingredients that enhance each other:

Absorption
Almond flour (gluten-free) Almond flour (gluten-free) Cinnamon Cinnamon

Magnesium + chromium for glycemic balance

Technical: Almond flour contains 270mg magnesium per 100g that activates insulin receptors. Cinnamon provides chromium and MHCP polymers that increase insulin sensitivity. Together they stabilize blood sugar levels more effectively than either alone.

What does this mean for you? Use almond flour with cinnamon in pancakes, muffins or smoothies for stable energy without sugar spikes. Perfect for diabetics or weight loss.

Synergy
Eggplant Eggplant Garlic Garlic

Chlorogenic acid + allicin: complementary NF-κB modulation

Technical: Eggplant contains chlorogenic acid (NF-κB modulation) and nasunin (iron chelator influencing lipid peroxidation). Garlic's allicin (formed when cut) has bioactive action via thiol enzyme inhibition. Together they modulate NF-κB signaling through complementary pathways.

What does this mean for you? Baba ganoush or imam bayıldı — classic combinations that have existed for centuries. Cut garlic 10 minutes before heating for maximum allicin formation.

Fat makes nasunin (purple antioxidant) absorbable

Technical: Nasunin in the purple eggplant skin is a fat-soluble anthocyanin that crosses the blood-brain barrier. Olive oil's unsaturated fats (73% oleic acid) form micelles that increase nasunin absorption up to 3x.

What does this mean for you? Eggplant absorbs oil like a sponge — that's actually an advantage! The oil makes nasunin absorbable. Fry in olive oil for maximum effect.

Nasunin + lycopene: complementary carotenoid-polyphenol pathways

Technical: Nasunin (eggplant) and lycopene (tomato) work through different mechanisms. Nasunin chelates iron, influencing lipid peroxidation, while lycopene quenches singlet oxygen. Studies show combined polyphenols and carotenoids work synergistically — the combination works through complementary mechanisms. With olive oil, both are optimally absorbed.

What does this mean for you? Parmigiana, ratatouille, zaalouk — Mediterranean and North African dishes always combine eggplant, tomato and olive oil. Culinary tradition backed by science.

Milk Milk Cinnamon Cinnamon

Milk calcium + cinnamon polyphenols for bone and blood sugar balance

Technical: Milk's calcium and vitamin D support bone metabolism — calcium contributes to the maintenance of normal bones (EFSA). Cinnamon's polyphenols and cinnamaldehyde activate AMPK and influence insulin signaling. Milk's casein slows absorption, extending cinnamon's effect on glycemic response.

What does this mean for you? Warm milk with cinnamon (as in talbina) is a traditional drink combining both calcium for your bones and bioactive polyphenols.

Olive Oil Olive Oil Garlic Garlic

Aglio e olio: allicin + oleocanthal via complementary biochemical pathways

Technical: Garlic contains allicin (formed when cutting/crushing) that influences HMG-CoA reductase (involved in lipid metabolism). Olive oil contains oleocanthal that modulates COX-1/2 enzymes. Together they influence lipid metabolism and prostaglandin cascade via complementary biochemical pathways. The fat also helps absorb fat-soluble garlic compounds.

What does this mean for you? Gently warm garlic in olive oil (don't burn!) as the base for many dishes. This is why 'aglio e olio' pasta is so beloved — two bioactive compounds that reinforce each other.

Mediterranean golden rule: fat increases lycopene absorption 4x

Fat significantly increases lycopene bioavailability (PMID: 15927929)

Technical: Tomatoes contain lycopene (3-7mg per 100g), a carotenoid with strong antioxidant action. Lycopene is fat-soluble with only 10-15% absorption without fat. Olive oil increases this to 40-60% (2.5-4x improvement). Cooking further increases lycopene bioavailability.

What does this mean for you? Always add olive oil to tomato dishes — sauces, salads, bruschetta. This is why Mediterranean cuisine is so healthy. Cooked tomatoes with olive oil = maximum lycopene.

Oregano Oregano Olive Oil Olive Oil

Fat makes carvacol and thymol absorbable

Lambert JD et al. (2004) in Molecular Nutrition & Food Research showed that dietary fats enhance absorption of phenolic compounds from herbs.

Technical: Oregano contains carvacrol (60-74%) and thymol (1-5%) — potent phenolic compounds with broad bioactivity, traditionally valued in food preservation. These compounds are fat-soluble and poorly absorbed without fat. Olive oil dissolves them and significantly increases their bioavailability. This explains why oregano oil always comes in a carrier oil.

What does this mean for you? Cook oregano in olive oil or make oregano-olive oil dressing. The bioactive compounds in oregano are fat-soluble — without oil you barely absorb them.

Mediterranean synergy - antioxidants stabilize lycopene

Böhm V et al. (2002) in Journal of Nutrition showed that antioxidants improve lycopene stability.

Technical: Oregano's antioxidants (rosmanol, carvacrol, thymol) protect lycopene from tomato against thermal degradation during cooking. Lycopene is heat-labile but released from cell walls by heating. The herbs act as an antioxidant shield: they scavenge free radicals that would break down lycopene.

What does this mean for you? Add oregano to tomato sauce during cooking. The oregano protects the lycopene while heat releases it — that's why Italian tomato sauce with oregano is so healthy.

Triple synergy: iron + vitamin C + lycopene for energy and heart

Technical: Ground beef contains 2.7mg heme iron per 100g (15% RDI) with 20-30% bioavailability. Vitamin C in tomato (13.7mg/100g) increases iron absorption by 300-400% via Fe³⁺→Fe²⁺ reduction. Simultaneously, fat in ground beef (10-20g/100g) increases lycopene absorption (3-9mg/100g tomato) by 400%. Triple synergy: iron for hemoglobin/ATP production, vitamin C for collagen/immunity, lycopene for antioxidant protection.

What does this mean for you? Bolognese, chili con carne or meatballs in tomato sauce — all these classics are scientifically optimal. Cook tomatoes 30+ minutes to increase lycopene by 35%. Add basil and garlic.

Complementary
Ground Beef Ground Beef Onion Onion

Quercetin + zinc for immune function and inflammation reduction

Technical: Ground beef provides 6.3mg zinc per 100g (57% RDI) — essential for T-cell differentiation and thymus function. Onion contains quercetin (25-50mg/100g) that facilitates zinc transport to immunocytes and together modulates NF-κB signaling. Complementary action: IgA secretion +20%, phagocytosis activity +25%, oxidative burst damage reduced. Selenium in beef (16μg/100g) enhances antioxidant capacity via glutathione peroxidase.

What does this mean for you? Always cook ground beef with finely chopped onion (1 onion per 400g meat). The onion adds flavor and moisture plus powerful immune support. Perfect for meatballs, burgers or tacos. Add garlic for synergistic effect.

More than 20 organosulfur compounds in one soffritto

Technical: Onion contains diallyl disulfide and quercetin (20-40mg/100g). Garlic contains allicin, ajoene and S-allylcysteine. Together they provide more than 20 different organosulfur compounds that modulate NF-κB. Allium crops are intensively studied in nutrition science for their unique sulfur chemistry.

What does this mean for you? Start every dish with sautéed onion and garlic — not just for flavor, but for the unique concentration of organosulfur compounds. Cut garlic 10 minutes before heating to allow allicin formation.

Quercetin + lycopene: synergistic polyphenol-carotenoid combination

Technical: Quercetin from onion (20-40mg/100g) and lycopene from tomato (2573μg/100g) work through different mechanisms. Quercetin chelates metal ions and modulates lipid peroxidation, lycopene quenches singlet oxygen. Combined polyphenols and carotenoids work synergistically — the combination works through complementary mechanisms.

What does this mean for you? Tomato sauce with onion is the base of nearly every Mediterranean cuisine — and rightly so. Quercetin and lycopene enhance each other's action through complementary biochemical pathways. Cooking in olive oil makes carotenoids more absorbable.
