- Now at its best: Red Onion
Ethiopia's national dish — chicken braised in a rich, complex berbere sauce with hard-boiled eggs. Served with injera. A festive dish that simmers slowly for hours.
There is something enchanting about a kitchen entirely captured by the scent of berbere — that warm, reddish-brown cloud of cayenne, cumin, cardamom and cinnamon that from the first bite tells you this is no ordinary chicken stew. The onions simmer patiently until they nearly dissolve, dark brown and silky smooth, before the spiced butter joins in. Then the meat: bone-in chicken thighs that slowly turn tender until they slide off the bone on their own. The hard-boiled eggs, pricked with tiny holes so the deep red sauce can penetrate to the center — a traditional gesture every Ethiopian cook recognizes. On a layer of injera, with your fingers: that's how this dish is meant to be eaten.

Nutritional Synergies
This recipe combines ingredients that enhance each other:
Traditional Ayurvedic combination for digestion
Technical: Cardamom contains 1,8-cineole and a-terpinyl acetate that promote digestive enzymes and relax intestinal smooth muscles. Ginger's gingerol accelerates gastric motility (prokinetic) and suppresses nausea.
What does this mean for you? Cardamom + ginger in chai or desserts is a classic Ayurvedic combination. Two spices that each support your digestion in their own way.
Digestion
Gingerols improve protein digestion and modulate the inflammatory response
Technical: Chicken breast contains 31g high-quality protein per 100g. Ginger contains gingerols that stimulate proteolytic enzymes (pepsin, trypsin), breaking down proteins more efficiently. Ginger also reduces formation of AGEs (Advanced Glycation End-products) when cooking meat.
What does this mean for you? Marinate chicken with fresh ginger or add ginger when cooking. This is the basis of many Asian chicken dishes (ginger chicken, congee) and improves both flavor and digestibility.
Muscle GainDigestionAnti-inflammatory
Allicin + gingerols: complementary bioactive action
Technical: Garlic's allicin works via thiol enzyme inhibition — effective against gram-positive bacteria (Staphylococcus, Streptococcus). Ginger's gingerols and shogaols influence viral replication and stimulate interferon production. Together they cover both bacterial and viral pathways.
What does this mean for you? Garlic-ginger tea is a classic combination. Garlic works via thiol enzymes, ginger via interferon pathways. Cut both fresh for maximum active compounds — allicin only forms after 10 minutes of air exposure.
Immune System
3x better carotenoid absorption with fats
Technical: Paprika powder is extremely rich in carotenoids: beta-carotene, capsanthin and cryptoxanthin. These are all fat-soluble with only 5-10% absorption without fat. Olive oil or butter create micelles increasing absorption up to 3x. Additionally, vitamin E from olive oil protects carotenoids from oxidation.
What does this mean for you? Always briefly fry paprika powder in oil or butter before adding liquid. This activates the color and increases vitamin absorption up to 3x — the basis of Hungarian goulash.
