Chili powder is a versatile seasoning for depth, warmth and color. It is often made from milder pepper varieties, such as ancho or New Mexico chili, making it rounder and fruitier than sharper cayenne pepper. In stews, bean dishes, marinades and sauces, it adds an earthy, slightly smoky undertone without the heat immediately taking over.
