Straight from the freezer, these coconut bites are firm and smooth, but once you bite into them they slowly soften and melt. The base is rich and round: coconut oil for the silky texture, coconut cream for softness and desiccated coconut for a fine grainy bite. Lime zest runs through it like a fresh green line, bright enough to make the full coconut flavour feel lighter without turning the dessert sharp. Vanilla adds warmth, while sea salt brings everything into clearer balance.
