  • Now at its best: Pumpkin Seeds

A grain-free granola with almonds, pecans, desiccated coconut and seeds, baked into crunchy clusters. The coconut oil and cinnamon give it a warm, rounded flavour. Make a batch for several mornings and store it in a sealed jar.

Even before the baking sheet leaves the oven, the kitchen is already filled with the warm scent of toasted coconut and cinnamon. The almonds and pecans slowly turn golden, the coconut becomes lightly toasted, and the seeds give every bite a small, firm crunch. The secret is in the cooling: only when you leave the granola undisturbed do those crumbly clusters form, the kind you want to pick straight from the jar. Serve it over thick yoghurt, with a few berries, or simply as a crunchy topping when breakfast needs a little more bite.

Nutritional Synergies

This recipe combines ingredients that enhance each other:

Absorption 2×
Coconut Oil Coconut Oil Almonds Almonds

MCTs improve vitamin E absorption from almonds

Technical: Almonds contain 25mg vitamin E per 100g (167% RDI). Vitamin E is fat-soluble and better absorbed with MCTs that quickly pass the gut wall. Coconut oil contains 60% MCTs serving as transport.

What does this mean for you? Coat almonds with coconut oil and lightly roast for a crunchy snack with improved vitamin E absorption.

Pecans Pecans Cinnamon Cinnamon

Double antioxidant boost for apple crumble

Technical: Pecans have the highest antioxidant content of all nuts (ORAC 17,940 per 100g) thanks to ellagic acid and gamma-tocopherol. Cinnamon contains cinnamaldehyde and proanthocyanidins (ORAC 131,420). Apple adds quercetin. Together they achieve an exceptionally high total ORAC value, with polyphenols neutralizing free radicals via different mechanisms.

What does this mean for you? Make apple crumble with pecans and cinnamon. This classic dessert is an antioxidant bomb — the pecans, cinnamon and apple reinforce each other as protection against cell damage.

Vanilla Extract Vanilla Extract Cinnamon Cinnamon

Vanillin + cinnamaldehyde reduce sugar craving

Technical: Vanillin activates sweet receptors (T1R2/T1R3) without providing calories, increasing perceived sweetness of dishes by 30-40%. Cinnamon's cinnamaldehyde activates AMPK and supports glucose uptake in cells, biochemically reducing sugar cravings. Together they lower the need for added sugar: vanilla makes sweeter (sensory), cinnamon supports glucose balance (metabolic).

What does this mean for you? Add vanilla extract + cinnamon to your coffee, oatmeal or yogurt instead of sugar. Your brain experiences sweetness but your glucose balance stays stable — the smartest way to eat less sugar.

Sunflower Seeds Sunflower Seeds Pumpkin Seeds Pumpkin Seeds

Broad mineral spectrum: zinc + magnesium + selenium

Technical: Sunflower seeds provide selenium (53μg/100g, 96% RDA) and vitamin E (35mg). Pumpkin seeds add zinc (7.6mg, 51% RDA). Sesame seeds bring calcium (975mg, 97% RDA). Together these three seed types cover a broad mineral spectrum: selenium for thyroid and immune system, zinc for cell division and hormones, calcium for bones and muscle contraction.

What does this mean for you? Make a seed mix of sunflower seeds, pumpkin seeds and sesame seeds. Sprinkle over salads, yogurt or bread. Three seeds that together fill multiple mineral gaps.
