Two slices of whole grain bread with a thin layer of butter and a generous amount of homemade strawberry chia jam. The classic sweet breakfast, but with jam that consists mostly of fruit instead of sugar. Make the jam (separate base recipe) in ten minutes and you have topping for the whole week.

Bread with jam is the breakfast of long Sunday mornings: fresh bread, cold butter, and that glossy red layer daring to run just over the edge. In this version the jam is deep red and chunky, with whole pieces of strawberry you can taste. The butter underneath is no needless luxury but the bridge between bread and fruit — salty and creamy against fresh and sweet. The chia seeds give a gentle bite that classic jam doesn't have. Simple to the point of banal, until you taste it next to a store-bought sandwich and the difference suddenly isn't subtle anymore.
