A Belgian classic in a homestyle version: tender chicken in a velvety sauce with mushrooms, leek, carrot and crème fraîche. Served in whole grain rolls with creamy mashed potatoes on the side.

Vol-au-vent is pure Belgian Sunday comfort: tender chicken, fragrant stock and a sauce that slowly turns thick and velvety. Mushrooms bring depth, leek and carrot add sweetness, and a small roux makes the ragout cling properly to the spoon. Crème fraîche rounds the sauce without making it heavy, while lemon juice and nutmeg lift it with freshness and warmth. Serve it in hollowed-out whole grain rolls or, for the classic version, in puff pastry shells. On the side: soft mashed potatoes, mashed rather than blended, with butter and a splash of warm milk.

Nutritional Synergies

This recipe combines ingredients that enhance each other:

Absorption 3×
potatoes potatoes butter butter

Better absorption of carotenoids and vitamin A

Technical: Yellow potatoes contain up to 400μg carotenoids per 100g (lutein, zeaxanthin). Butter provides saturated fats (52g/100g) plus its own vitamin A (684μg retinol). Saturated fats improve micelle formation for carotenoid absorption up to 3x. Butter also contains butyrate precursors that nourish colonocytes.

What does this mean for you? Butter on your potato isn't just tasty — it increases carotenoid absorption up to 3x. Choose yellow potato varieties for the most beta-carotene.

Butter increases beta-carotene absorption from carrot by 6x

Fat is essential for carotenoid absorption (PMID: 15927929)

Technical: Carrot contains 8285μg beta-carotene per 100g — the highest concentration of all vegetables. Without fat only 5-10% is absorbed because beta-carotene is fat-soluble. Butter's saturated fat promotes micelle formation in the small intestine, efficiently packaging beta-carotene for absorption. Just 3-5g butter increases uptake 3-6x.

What does this mean for you? Always eat carrots with some butter or other fat. Without fat most beta-carotene is lost — a knob of butter makes a world of difference.

Synergy
bay leaf bay leaf onion onion

Cineole + quercetin: aromatic broth base

Technical: Bay leaf contains 1,8-cineole (eucalyptol, 50% of oil), an aromatic compound. Onion's quercetin (20mg/100g) is a flavonoid. Bay leaf also contains parthenolide, studied in research in relation to COX signaling. The combination is the base of broth and stews in every Mediterranean cuisine.

What does this mean for you? Always add bay leaves together with onions as the base of your broth or stew. The combination gives a warm, aromatic base to any dish.

Absorption 20×
milk milk black pepper black pepper

Golden milk: fats + piperine = 2000% better curcumin absorption

Technical: Milk fat dissolves fat-soluble curcumin and forms micelles improving gut absorption. Piperine from black pepper inhibits the enzyme CYP3A4 and glucuronidation in the liver, preventing curcumin from being immediately broken down. This dual mechanism — better absorption + slower breakdown — increases bioavailability to 2000% (20x). The basis of traditional golden milk.

What does this mean for you? Make golden milk with warm milk, turmeric and a pinch of black pepper. Without the milk fat and pepper your body absorbs virtually nothing from the turmeric — with both ingredients up to 20x more.

Anti-inflammatorySleep

Synergy
nutmeg nutmeg milk milk

Myristicin + tryptophan for sleep promotion and relaxation

Technical: Nutmeg's myristicin has mild sedative properties via MAO inhibition. Milk's tryptophan is converted to serotonin and melatonin. Milk's casein slows absorption, keeping nutmeg's bioactive compounds active longer.

What does this mean for you? Warm milk with nutmeg before bed is an age-old sleep recipe — and it really works through two complementary mechanisms.

Complementary
leek leek carrots carrots

Prebiotic inulin + beta-carotene

Technical: Leek's inulin (2-5g/100g) feeds Bifidobacterium producing short-chain fatty acids (butyrate) for colonocytes. Carrot provides 8285μg beta-carotene per 100g. A healthy gut flora (fed by inulin) increases beta-carotene absorption efficiency, as gut bacteria optimize enterocyte function.

What does this mean for you? Leek-carrot soup is a classic combination. Inulin from leek feeds your gut flora, and a healthy gut flora in turn improves beta-carotene absorption from carrot. Double benefit from two simple ingredients.
