Large mushroom caps filled with a mixture of sautéed spinach, egg, garlic and turmeric, baked golden brown in the oven.

Few things are as satisfying as a row of stuffed mushrooms coming out of the oven golden brown. The caps are soft and juicy, the filling firm and spiced. You start by scooping out the stems — save them, they go finely chopped into the filling. Spinach wilts in the pan with garlic into a dark green mass, turmeric turns everything warm yellow. Egg as a binder, oregano for depth, a pinch of sea salt. Spoon the filling into the caps, set them on the baking tray, and let the oven do the work. After fifteen minutes the top is crispy and the mushroom cooked through and soft. They're ready to eat straight off the tray — careful, they're hot.
