A classic Korean side dish of blanched spinach with sesame oil and seeds. Quick to make, full of flavour and perfect as banchan with rice.
Sigeumchi namul is one of those banchan — Korean side dishes — that you end up scooping onto your plate three times without thinking. The trick is in the blanching: thirty seconds, no more, so the spinach is just wilted but still vibrant green. Then squeeze, really squeeze, until there's truly no water left. Only then do you reach for the sesame oil, the raw garlic, a splash of tamari. The sesame seeds — preferably toasted yourself in a dry pan until they start to crackle — give that characteristic nutty depth that makes Korean food so addictive. Serve at room temperature alongside a bowl of rice, kimchi and a few other banchan. Simple. Just right.
