- Now at its best: Spinach
A savoury Korean noodle dish with thinly sliced beef, crisp vegetables, spinach, mushrooms and a nutty sauce of soy sauce and sesame oil. Delicious warm, but also ideal at room temperature for meal prep.
As soon as the noodles go back into the wok, they take on that deep shine from sesame oil and soy sauce. The beef is cooked quickly over high heat, so the edges darken while the inside stays juicy. Carrot, bell pepper and mushrooms keep just enough bite, the spinach folds into the noodles at the last moment, and toasted sesame seeds and fresh spring onion rings finish it off. Japchae feels festive without being complicated: steaming and fragrant straight from the wok, or later at room temperature as a lunch that still tastes rich and rounded.

Nutritional Synergies
This recipe combines ingredients that enhance each other:
Beta-glucans + allicin activate complementary immune pathways
Technical: Mushrooms contain beta-glucans (polysaccharides) that activate macrophages and NK cells via Dectin-1 receptors — the innate immune system. Garlic's allicin stimulates T-cell proliferation and activates the Th1 response — the adaptive immune system. Together they activate two complementary branches of the immune system.
What does this mean for you? Sauté mushrooms with garlic — a combination that engages two different branches of the immune system. Cut garlic and wait 10 minutes before heating so allicin fully forms.
Immune System
Sesame + soy = complete amino acids + fats
Technical: Rice noodles (rice flour) are low in lysine — the limiting amino acid in rice protein. Soy sauce (fermented soybeans) is rich in lysine and provides free glutamate for umami. Sesame oil contains methionine (complementary amino acid) plus sesamin and sesamol — unique lignans with antioxidant action. Together they form an amino acid-complete profile.
What does this mean for you? Stir-fry rice noodles with sesame oil and soy sauce — this is the foundation of countless Asian dishes. The three together provide complete proteins, healthy fats AND intense umami flavor. Add vegetables for a complete meal.

Sesame oil fats enhance absorption of sesame seed lignans
Technical: Sesame seeds contain lignans (sesamin, sesamolin) that are fat-soluble. Sesame oil provides the ideal fat matrix for absorption. Additionally, the oil contains different bioactive forms (sesamol) that work complementarily to lignans in whole seeds.
What does this mean for you? Top dishes with both sesame seeds and a drizzle of sesame oil — you get the fiber and minerals from the seeds plus optimal lignan absorption.

Sesame oil increases fat-soluble vitamin absorption from spinach 3-5x
Technical: Spinach contains vitamin K (483μg/100g, 400% RDI), beta-carotene and lutein - all fat-soluble. Sesame oil contains lignans (sesamin) that act as antioxidants and 50% monounsaturated fats that stimulate micelle formation.
What does this mean for you? Drizzle spinach with sesame oil (Korean/Japanese style) for maximum nutrient absorption. This is why namul (Korean spinach) is always made with sesame oil.

Iron + calcium + copper: mineral synergy
Technical: Spinach contains 2.7mg iron per 100g (15% RDI). Sesame seeds contain 975mg calcium per 100g (highest of all seeds!) plus 14.5mg iron. The combination delivers a rich mineral dose. Sesame seeds also contain copper (4.1mg/100g) — copper contributes to normal iron transport in the body (EFSA-approved).
What does this mean for you? Korean namul (sesame spinach) is not only delicious but also exceptionally mineral-rich. Copper from sesame seeds contributes to normal iron transport. Ideal for vegetarians.
