Layered popsicles of bright yellow mango purée and white coconut milk, finished with a splash of lime juice. The mango gives the natural sweetness, the coconut milk the creamy texture and the lime the freshness that opens up on the palate on a hot day. An optional tablespoon of honey per layer adds a touch of sweetness; without honey the fruit comes through even sharper.

The mango filling is pure ripe mango with a splash of lime juice (no sugar syrup, no E102 colour, no flavourings); the white layer is full-fat coconut milk. With genuinely ripe mangoes, the optional honey can be skipped entirely. The result is recognisably sweet and creamy but with a short, transparent ingredient list.
Why better: Mango is, per USDA, a natural source of vitamin C (around 36 mg per 100 g, which under the EU definition qualifies as a source of vitamin C); vitamin C contributes to the normal functioning of the immune system, to normal collagen formation for a normal function of the skin and to the protection of cells from oxidative stress (EU 432/2012). In addition, mango contains beta-carotene that is converted to vitamin A in the body; vitamin A contributes to the maintenance of normal vision, to the maintenance of normal skin and to the normal function of the immune system (EU 432/2012). The fat from full-fat coconut milk improves the absorption of fat-soluble compounds such as beta-carotene (Brown 2004, American Journal of Clinical Nutrition; Unlu 2005, Journal of Nutrition). Note: full-fat coconut milk is relatively high in saturated fat (USDA: around 18 g of fat per 100 ml, largely saturated); 1-2 popsicles per day fit within a balanced diet.

Mango — 300 g ripe, cubed (soft under light pressure, strongly aromatic) -
Full-fat coconut milk — 200 ml well shaken before use
Instructions
- 1 Peel the mango, cut the flesh away from the stone and put the cubes in a blender with the fresh lime juice and 1 tbsp honey. Blend 1-2 minutes to a completely smooth purée.
- 2 Shake the coconut milk well, pour into a bowl and whisk with the remaining 1 tbsp honey until the honey is fully dissolved.
