## Carbohydrates, fibre and preparation

Toor dal contains starch and fibre that give dal, sambar and stews a soft, full texture during cooking. In nutrition research, toor dal is also studied in foods such as chapati and crackers, including for its combination of protein, fibre and starch digestion. Preparation

Soak for 6-8 hours, rinse and cook for 45-60 minutes until soft and creamy. In a pressure cooker, 15-20 minutes on high pressure is usually enough. Finish with a tadka of cumin, mustard seeds, turmeric and curry leaves.

Substitutes

rode-linzen 1:1 Red lentils cook faster (20-25 min, no soaking needed) and also give a creamy texture, but they have a milder flavour than toor dal. A good substitute in soups.
gele-linzen 1:1 Yellow lentils (moong dal) taste lighter and work well in dal dishes when you want a milder option. Cooking time is similar.

Smart preparation
