Wheat flour is replaced by home-ground oat flour, refined sugar by ripe banana plus a spoon of maple syrup, butter by a little coconut oil and, surprisingly, by 200 g of finely grated zucchini. Zucchini is almost flavourless and, per USDA, about 95% water; it acts as a natural moisture reservoir during baking, which keeps the muffins soft for days.
Why better: Oats are naturally rich in beta-glucan, a soluble fibre: the consumption of oat beta-glucans contributes to the maintenance of normal blood cholesterol at a daily intake of at least 3 g of oat beta-glucans (EU 432/2012). A single muffin provides around 0.4 g of oat beta-glucan — a meaningful contribution to the daily target, without reaching the threshold in one muffin.
