Za'atar smells like the Levant — thyme, sumac, sesame seeds, a hint of oregano, all ground into a greenish powder you'll want to sprinkle on everything. On crispy oven-roasted chickpeas it's at its best. The sumac brings an unexpected citrusy tang, the thyme a herbal warmth, and the sesame seeds a nutty undertone that ties it all together. After twenty-five minutes at 200 degrees you have a baking sheet of golden crunchy bites that vanish straight from the tray. Store them in a jar — if they make it to tomorrow.
