Homemade chocolate bars with date caramel, crunchy peanuts and dark chocolate. Same addictive combo, but with real ingredients.

The blueprint of a Snickers — caramel, peanuts and chocolate — rebuilt. The caramel layer is a date-peanut-butter paste (no glucose syrup, no invert sugar, no hydrogenated fats), the peanut layer is unsalted roasted peanuts (no sugar-coated salted peanut fragments), and the chocolate layer is dark chocolate (≥ 70%) with a little coconut oil for a clean, glossy pour. The result is recognisably Snickers-like in flavour, but built from four recognisable whole ingredients.

Why better: Peanuts and peanut butter are naturally high in protein (per USDA around 25 g of protein per 100 g of peanuts and around 22 g per 100 g of natural peanut butter); proteins contribute to a growth and a maintenance of muscle mass and to the maintenance of normal bones (EU 432/2012). Dark chocolate from 70% cacao is, per USDA, a source of magnesium (around 228 mg per 100 g); magnesium contributes to normal energy-yielding metabolism, to normal muscle and nervous-system function and to the reduction of tiredness and fatigue (EU 432/2012). Dates provide quickly available carbohydrates plus around 7 g of fibre per 100 g (USDA) and, together with the protein and fat from the peanuts, produce a more gradual glycaemic response than pure sugar caramel (mixed-meal GI effect; Atkinson et al. 2008, Diabetes Care).
