  • Now at its best: Honey

Crunchy roasted almonds with a thin, matte coating of cacao powder, shredded coconut and honey. The same convenient grab-and-go snack feel as M&M's or chocolate nuts, but without colourings, milk chocolate or refined sugar — just whole nuts, pure cacao and coconut.

Replaces: M&M's, chocolate-coated nuts, candy chocolate

Chill time: 30 min

That practical "one-hand-in-the-bag" snack feel of chocolate-coated nuts — but built from three whole ingredients: almonds, pure cacao and coconut. The almonds are briefly toasted, coated while still warm in a thin layer of honey and coconut oil, then rolled in cacao powder and shredded coconut for a matte, almost "candy-coated" finish without a sugar shell.

Why better: No refined sugar, no colourings, no milk powder, no palm oil. Almonds are a natural source of vitamin E, magnesium and monounsaturated fatty acids; vitamin E contributes to the protection of cells from oxidative stress and magnesium contributes to normal functioning of the nervous system and to normal psychological function (EU 432/2012). Pure cacao is likewise rich in magnesium and naturally provides polyphenols (cocoa flavanols). Together this makes a snack with substance instead of air and sugar.

This recipe combines ingredients that enhance each other:

Double magnesium boost: 500mg per 100g combined

Technical: Almonds (270mg magnesium/100g) and cacao (230mg/100g) together provide 500mg magnesium - more than the daily recommendation. Magnesium is crucial for 300+ enzymes, muscle contraction and ATP energy. Cacao also adds theobromine for mild stimulation.

What does this mean for you? Make trail mix with almonds and cacao nibs, or bake chocolate-almond snacks. Ideal for muscle cramps, stress or fatigue.

Vitamin E + flavonoids for enhanced antioxidant protection

Technical: Almonds are rich in alpha-tocopherol (vitamin E), a fat-soluble antioxidant. Honey's flavonoids (chrysin, pinocembrin) are water-soluble antioxidants. Together they provide protection in both lipid and aqueous compartments of cells.

What does this mean for you? Almonds with a bit of honey is not just a classic snack, but gives your cells double antioxidant protection — in fat and water.

MCTs improve vitamin E absorption from almonds

Technical: Almonds contain 25mg vitamin E per 100g (167% RDI). Vitamin E is fat-soluble and better absorbed with MCTs that quickly pass the gut wall. Coconut oil contains 60% MCTs serving as transport.

What does this mean for you? Coat almonds with coconut oil and lightly roast for a crunchy snack with improved vitamin E absorption.

MCTs increase flavonoid absorption from cacao

Fats increase bioavailability of cocoa flavanols (PMID: 19628108)

Technical: Cacao contains flavanols (epicatechin, catechin) that are fat-soluble. Coconut oil contains 60% MCTs (Medium Chain Triglycerides) that are quickly absorbed and increase the absorption of polyphenols from cacao. MCTs go directly to the liver and are converted to ketones, while flavanols remain available.

What does this mean for you? Add a teaspoon of coconut oil to your hot cocoa or use it in chocolate recipes. This increases not only the creamy texture but also the bioavailability of cacao flavonoids.

MCTs protect honey enzymes — complementary bioactive compounds

Technical: Coconut oil contains lauric acid (48%), a medium-chain fatty acid (MCT). Honey contains glucose oxidase producing hydrogen peroxide. Together they provide complementary bioactive compounds. MCTs also help preserve fat-soluble compounds in honey.

What does this mean for you? Combine coconut oil with honey in energy balls, granola or as coating for snacks. The combination is both flavorful and functional.

Instructions
  1. 1 Toast the almonds for 8-10 minutes in a dry pan over medium heat, shaking regularly, until just light brown and fragrant. Transfer them off the pan onto a plate as soon as they're ready — a hot pan keeps toasting for several more minutes.
  2. 2 In a small pan over low heat, warm the honey with the coconut oil for 1-2 minutes until both are just melted and fluid. Do not let it boil — that turns the honey bitter and brittle.
