The fudgy brownie texture you normally get from butter, flour and sugar, rebuilt here from canned black beans (rinsed well so the bean flavour disappears), pitted Medjool dates for natural sweetness, raw cocoa powder for deep chocolate flavour and two eggs as binder. The classic brownie is a powerful combination: lots of flour, lots of butter, lots of sugar — not a single ingredient contributes beyond texture and calories. This version preserves the sensory goal (fudgy, dark, cocoa-bitter, lightly sweet) but rebuilds the base: flour is replaced by puréed black beans (starch, protein, fibre), sugar by Medjool dates (intrinsic fructose + glucose + fibre) and part of the butter by coconut oil (plant-based, less dairy). The result is a brownie with the same bite, but with a nutritional profile that no longer leans on refined flour and added sugar.
Why better: Black beans supply, per USDA, around 21 g of protein and around 16 g of fibre per 100 g dry weight (around 8.7 g protein and 8.7 g fibre per 100 g cooked); proteins contribute to a growth and a maintenance of muscle mass (EU 432/2012). Medjool dates supply, per USDA, around 67 g of carbohydrate and 6.7 g of fibre per 100 g; fibre increases the volume and viscosity of intestinal content, supporting normal digestion. Cocoa powder supplies, per USDA, around 499 mg of magnesium per 100 g (about 25 mg per brownie when 50 g cocoa is split across 12 brownies); magnesium contributes to normal energy-yielding metabolism, to normal muscle and nervous-system function and to the reduction of tiredness and fatigue (EU 432/2012). Eggs supply vitamin B2 and B12 which contribute to normal energy-yielding metabolism (EU 432/2012). At 125 kcal per brownie, this is a realistic, moderate-calorie dessert — intended as a genuine replacement for a classic brownie, not a licence for double portions.

Canned black beans — 400 g drained and rinsed very well under cold running water (one 400 g can = around 240 g drained) -
Dates — 150 g Medjool, pitted; if firm, soak 10 minutes in warm water and drain
Instructions
- 1 Preheat the oven to 175°C (fan 160°C). Grease a 20x20 cm square baking pan with a thin layer of coconut oil, or line the base with parchment paper with two overhanging flaps so you can lift the brownie out easily afterwards.
- 2 Rinse the black beans under cold running water until the water runs completely clear — this takes longer than you think and is the key step for removing the beany flavour. Drain in a sieve for at least 2-3 minutes.
