What is this ingredient?

Falafel are crispy balls made from ground, soaked chickpeas with coriander, cumin, garlic and often parsley or fresh cilantro. This traditional Middle Eastern dish combines the hearty texture of legumes with aromatic spices and is usually served with tahini, salad, pickled vegetables or pita bread.
