  • Now at its best: Spinach

A stuffed whole wheat wrap with crispy pan-fried tofu in tamari-sesame oil, creamy hummus, fresh spinach, grated carrot and cucumber. Plant-based, fiber-rich and ready in 25 minutes.

The tofu is golden brown. Crispy on the outside, soft inside, glistening with sesame oil and tamari. You smell it before you even fill the tortilla — that warm, salty, almost caramel-like scent of fried soy. The hummus goes on the warm tortilla first: a thick layer, cream-white, slightly grainy. On top baby spinach — dark green, raw, fresh against the warm hummus. Grated carrot in orange shreds. Cucumber in strips, cool and watery. Then the tofu, still warm, in golden cubes on top. Sesame seeds over it — you can almost hear them tapping the surface. Roll up: the tortilla bends along, everything sits firm. Cut in half. The cross-section shows everything: the layers of green, orange, white, gold. Each bite combines textures: crispy, creamy, fresh, warm. This is a wrap that does not try to imitate meat. It is simply good.

This recipe combines ingredients that enhance each other:

Absorption 4×
Hummus Hummus Carrot Carrot

Fats in hummus increase beta-carotene absorption 4x

Technical: Hummus contains tahini (sesame fat) and olive oil — two fat sources that increase carotenoid absorption. Carrot contains 8285μg beta-carotene, bell pepper 2094μg — both fat-soluble with only 5-10% absorption without fat. The fat in hummus increases beta-carotene absorption up to 4x, making more provitamin A available.

What does this mean for you? Dip carrots and bell peppers in hummus as a snack. The fats from tahini and olive oil in the hummus ensure you get 4x more vitamins from the vegetables.

Sesame oil fats enhance absorption of sesame seed lignans

Technical: Sesame seeds contain lignans (sesamin, sesamolin) that are fat-soluble. Sesame oil provides the ideal fat matrix for absorption. Additionally, the oil contains different bioactive forms (sesamol) that work complementarily to lignans in whole seeds.

What does this mean for you? Top dishes with both sesame seeds and a drizzle of sesame oil — you get the fiber and minerals from the seeds plus optimal lignan absorption.

Sesame oil increases fat-soluble vitamin absorption from spinach 3-5x

Technical: Spinach contains vitamin K (483μg/100g, 400% RDI), beta-carotene and lutein - all fat-soluble. Sesame oil contains lignans (sesamin) that act as antioxidants and 50% monounsaturated fats that stimulate micelle formation.

What does this mean for you? Drizzle spinach with sesame oil (Korean/Japanese style) for maximum nutrient absorption. This is why namul (Korean spinach) is always made with sesame oil.

Iron + calcium + copper: mineral synergy

Technical: Spinach contains 2.7mg iron per 100g (15% RDI). Sesame seeds contain 975mg calcium per 100g (highest of all seeds!) plus 14.5mg iron. The combination delivers a rich mineral dose. Sesame seeds also contain copper (4.1mg/100g) — copper contributes to normal iron transport in the body (EFSA-approved).

What does this mean for you? Korean namul (sesame spinach) is not only delicious but also exceptionally mineral-rich. Copper from sesame seeds contributes to normal iron transport. Ideal for vegetarians.

Synergy
Tamari Tamari Sesame oil Sesame oil

Fermented soy isoflavones + sesamol for antioxidant protection

Technical: Tamari contains fermentation-released isoflavones (genistein, daidzein) that work synergistically with sesame oil's sesamol and sesaminol. Together they provide broader antioxidant protection via different radical scavenging mechanisms.

What does this mean for you? A splash of tamari with sesame oil as dressing or stir-fry sauce gives not only umami flavor but also a double antioxidant effect.

Umami amino acids enhance mineral absorption from sesame seeds

Technical: Tamari's free glutamic acid and amino acids from fermentation promote absorption of zinc and iron from sesame seeds. The organic acids in fermented soy lower intestinal pH, making minerals more soluble.

What does this mean for you? Sprinkle dishes with tamari and sesame seeds together — a classic Asian combination that's not only delicious but also optimizes your mineral absorption.

Calcium synergy: double plant-based calcium source

Technical: Tofu (prepared with calcium sulfate) contains 350mg calcium per 100g. Sesame seeds provide 975mg calcium per 100g. Tofu's isoflavones improve calcium absorption. Good to know: calcium is needed for the maintenance of normal bones (EFSA-approved).

What does this mean for you? Serve tofu with sesame (tahini sauce or sesame seeds) for a rich plant-based calcium intake. Two of the best plant-based calcium sources in one dish.
