Crispy wraps of blanched pointed cabbage leaves filled with creamy hummus, avocado, carrot strips and red cabbage. Light, fresh and full of fiber — a low-carb wrap that is surprisingly filling.
You pick up a cabbage leaf. Light green, smooth, just blanched — it bends without tearing. The hummus goes on: creamy, slightly earthy, still cold from the fridge. On top the avocado: pale green, so soft it nearly melts on the warm hummus. Carrots in strips, orange, crunchy. Red cabbage: purple, compact, with that typical sweet spiciness. - 2 Use a sharp knife to shave the thick rib of each leaf thinner so it rolls more easily. Lay the leaves flat on a clean work surface.
